I love making these for breakfast. I always just do one egg with the bread, never done it as a sandwich. Might have to try this one sometime…YUM!
My mom made this for me but a little differently - she used just one piece of bread and one egg to make an “egg-in-the-hole,” but this is an interesting twist I must try. I have continued on the “egg-in-the-hole” tradition for my roomies and for myself so this will be a fun way to spice it up though I usually use egg beaters now to make eggs a little healthier!
